I don’t know who will see this, but I’m giving it a shot anyway.</p><p>I started this blog years ago, specifically to bake through Dorie Greenspan’s “Baking From My Home to Yours” . My boys were little, I was a stay home mom and I loved to bake. All the pieces fell in place and I found a community of bakers that was just amazing. I looked forward to reading as many posts as I could, and tried to comment and show as much support as I could. It was an amazing experience and one that I have missed.</p><p>So, I’m back to bake through Dorie’s latest book, “Baking with Dorie”. So far, I’ve made the Miso-Maple Loaf (yum!) and this week, I’ve made the English Muffins. </p><p>During the early part of the COVID lockdown, I told my husband Marc that I wanted to try making English Muffins, and he thought I should make sour dough bread, like so many other inspired bakers. I never made either, by the way.</p><p>However, I did make these English Muffins. I was a little nervous to make the whole batch because I have young men who are very specific about the types of carbs they want to eat, and I’m trying to avoid carbs. Still, I made the whole batch, thinking I would share them with my sister.</p><p>I meant to bake them on Sunday morning, but time slipped away too quickly. I ended up cooking them up as I roasted a chicken for Sunday dinner, and my oldest son inhaled 2 of them. My first dozen were made as written in the recipe, using creamy Skippy Natural Peanut Butter. I decided to add in some chocolate chunks to the remaining dough, and I'm not sorry about that.</div>

I baked mine for about 16 minutes and they were golden brown. These came out pretty firm and sort of snapped when you broke them or bit into them, but were chewy in the middle. Next time, I would probably bake for a few minutes less. </div>

Life has been busy, but I'm sure no busier than any of my other baking, cooking, and blog friends of the past. I look forward to getting to see you and your blogs each week and what you have come up with.<br />

This week, I baked Chocolate Sandwich Cookies from Dorie's Book.<br />
<br />
I was lucky enough to be off from work on Monday, so I worked around the house and remembered that the recipe was due this week. Sometimes, I don't know what day it is, so I was happy that I remembered! I tossed the dough together and rolled it out on wax paper and stuck into the fridge. I cut the cookies early this morning, before the boys were up and before my morning work out. Then, I popped them back into the fridge to bake a bit later.<br />
<br />
They baked quickly and smelled pretty tasty! I pulled the filling together and assembled a few to leave for the kids when they get home from school.<br />
<br />
I liked the consistency of the filling and felt that it was matched well with the cookie itself. I hope the rest of the family enjoys them as well. There's a lot of competition as far as sweets go around here, after all of the trick or treating last night. If they don't want to eat them, I will send them into school tomorrow.<br />

I got 19 sandwich cookies out of this, but I could have gotten more if I had re-rolled the dough. Instead, I balled up the scraps and put them in the fridge for a later date. I'm sure we will find something to do with them. <br />

I'm really happy to be back in the realm of blogging. I'm sure much has changed since I've been here last. However, I'm looking forward to participating again in <a href="https://tuesdayswithdorie.wordpress.com/">TWD </a>and getting to know the other bloggers having the opportunity to read what they are cooking up on their blogs!<br />

It's funny how much time I have spent in this dusty space, thinking about how it will all look, and wondering where I will put everything. I thought it was a perfect way to start the day, and fitting, as it was my 16 year anniversary with Marc. Why not give each other a kitchen to celebrate our anniversary?<br />

I was out of the house for most of the day, but I did get a glimpse of the cabinets as they loaded them into the house. And when I came home later that afternoon, I found the sink base and the 2 lazy Susan corner cabinets in place. Most of the other cabinets had been laid out, but not permanently put in place yet.<br />

I was also happily surprised to find that the bathroom floor tile was put in.<br />

All the way to the left is the small of my corner Susan cabinets, and then the space for the dishwasher. Then you see the space that my large range top will be occupying, with space for 2 large drawers underneath. Next to that, there is a cabinet that will house a magic corner pull out shelf. <br />

Against that longer, magic corner shelf, you see the cabinet that will hold the new microwave drawer. This peninsula will have enough space behind it for 2 counter height stools, to keep the audience I usually have in the kitchen comfortable. Lucky boys. :)<br />

This is the window in my kitchen. We never really used the giant window that was there, so we moved it into the dining room. As you can see, the window opens up onto my back porch, which is one of the reasons I don't use it all that often. I didn't want to lose the light though, so we scaled it down just a bit. Of course, that means we have to do a little fix up on the back porch now, as well. But that's fine.<br />

We found this old newspaper in the bathroom walls. It's the New York Times from August 20, 1950. Kinda funny that we started our renovation on the 30th of August, 62 years and 10 days later.<br />

During the demo, the kitchen continued to be the heart of the home. Or, in this case, the heart of the remodel. Here, they were busy cutting wood to place a header in the ceiling where the dining room wall was.<br />

Here's the header in and the electrical is dangling. There was lots of water lines that had to be moved before the wall came down. The plumber did a fine job. We accidentally didn't have water for a weekend, but he did try to fix that on a Saturday. Turns out it was a simple fix that was done on Monday morning. Thankfully, our garage has a separate hot water heater, so it was showers in the garage for everyone!! <br />

So, our kitchen and bathroom remodel began on Thursday, August 30th. Our contractor, Jonny, worked hard with a helper for Thursday and Friday, and then they were off for the long Labor Day weekend. They were back on Tuesday the 4th with Greg the plumber and they all worked until Thursday. We knew we would be worker-less on Friday and that was fine, since it was the first day of school and we had lots going on.<br />
<br />
We had some workers back on Monday and Tuesday,, including the plumber and the electrician, but Jonny wasn't back until Wednesday. I have to say that so far, I am happy with all of the workers we have had in our home. They have been communicative, on time, kind and, knowing that there are kids in the house, they've been mindful of their language. A plus in my book!<br />
<br />
And things are moving right along. Since we took a wall down between the dining room and kitchen, all the drywall ended up coming down in the dining room, too. So, that room is getting a face lift, too. We are replacing a window in there as well. Surprisingly, the dust hasn't been nearly as bad as I thought it would be. However, once the drywall goes up and the floors get sanded, I'm sure I will be singing a different tune.<br />
<br />
All of the plumbing, except the finish work, has been completed so far. The electrician is pretty close to being finished, after only a day and a half. They are hoping to start the drywall today, so I can't wait to see what I might find later on this afternoon. Oh, and the hard-wood floor guy should be in next week. It seems to be moving surprisingly quick.<br />
<br />
During all of the planning, we were given a time line of 4 to 5 weeks, and it actually looks as though we might finish on time. Paint colors have been chosen, the tile has been ordered, and the checks are flying out of the check book pretty darn quick. :-)<br />

The kitchen was pretty much completely demoed by the end of day one. The picture above was snapped during the process. And down below, after the guys cleaned up. All that remained was the dishwasher, the sink drain, my old radiator and the only piece of insulation on the ground floor. <br />

So, the picture shown above is my dining room. I wasn't really aware that all of the dry wall was coming down in this room until it was actually being ripped off of the walls. Apparently, I didn't pay close enough attention when I read our contract. It was necessary, and now that room will be correctly and fully insulated as well. That window on the far end of the wall is being replaced by a larger, wider window.<br />

At 7:30 am this morning, our contractor, John showed up with the plans in hand. He and his assistant Carlos quickly got to work and covered the archway that leads from the dining room into the living room with a giant sheet of plastic.<br />

Our last days with the kitchen were filled with non-stop, packing good times. The downer to all of this excitement? Marc was diagnosed with Shingles on Monday evening. Monday evening, the 27th of August...which also happened to be his birthday. What a night, right? So, he was in pain, a lot of pain. However, he muscled through and helped load many boxes into the basement and take down light fixtures.<br />

On the positive side, and I am always looking for the positive side, he is home from work for the rest of the week. Now, this is a real plus, as he has been working an insane amount of overtime at his job for quite some time, some weeks working all through the weekend and then doing it all over again. So, he is off for the week and we are glad to have him, and he has a scheduled week off next week, too. It will be nice to have him home.<br />

The boys had a grand old time claiming the dining room as a short term play room, and that was good and kept them busy. Schlepping things to the basement was a tough sell on these guys. <br />

We are literally hours away from the hammers swinging, the dust flying, the walls coming down, and 2 energetic little boys eating, playing and really living in the living room. Should be interesting, right?<br />

I have so many feelings about the whole project. We have been dreaming about renovating our kitchen since we moved into our home, in April of 1998. We bought this wonderful house from a kind family with long ties to the area. Their kitchen was never our dream kitchen, but it has served us well, for so many years.<br />

We sat alone with our realtor in their kitchen, at their kitchen table, and talked about what we would offer on the house. We had been in the house for less than 10 minutes when we knew that this was the one. This would be the house where we would start a family, and we have. <br />

Our home has a great 3-season porch in the back that's off the driveway, and we use that as our primary entrance. So, when our boys came home, they came into the kitchen first. The kitchen, with it's yellow flowered wall paper, welcomed them home.<br />

I fed my boys their first bites of baby food in this kitchen. They sat in the drawers. They played in the cupboards, calling it a house as they shut themselves inside and held a flash light for fun. I've baked with little boys standing on the chairs and sitting on the counters. They played on the floor, at my feet, as I cooked. We held dance parties on the linoleum and practiced our animal sounds together.<br />
<br />
<br />
Maybe I am feeling so nostalgic because, as I we are changing things and gaining a new kitchen, I am remembering the little boys who are growing so rapidly. There's no going back. But, trying to stay positive and find the silver lining, there will be so many more memories to be had in the new kitchen.<br />
<br />
We will celebrate more birthdays and graduations. We'll have more cooking lessons, but with room for more than one little cook. We'll do homework (yahoo? no.) and we'll try new foods. We'll still have the occasional dance party, too. <br />
<br />
Perhaps we will meet a future daughter in law? And someday, with any luck, we will entertain our grandchildren in this new kitchen. Who knows what we will find when the dust settles? It's me, Pam. It has been quite a while, hasn't it? I don't know what happened to me. I guess I would say that my lack of posts is due to a combination of factors that I have blogged about before. You know...laziness, lack of inspiration, no baking, and more laziness? That's me. That's what's been going on around here.<br />

Well, that's not all that's been going on around here. I think that all of the other family activities tend to make me feel like it's okay if I let all of my interests and activities slide to the bottom of the pile. When you are so busy, it's so easy to let yourself come in last. And by doing that, I end up feeling even worse about myself than I already do. I was excited about making these sticky buns. Even though I knew it would be a lot of work, I really couldn't wait to see how they turned out. <br />

And then I decided to really be stringent and dedicated to my healthier eating promise to myself. So, I was obviously feeling nervous about having this kind of tempting treat around. Knowing that my family would never eat all of these sticky buns, or even half the recipe, I was feeling unsure about what to do.<br />
<br />
In the end, I made the whole recipe and sliced off 3 sticky buns to bake, and tossed the rest of them into the freezer. I sampled a bit of one and quickly gave the rest away, for fear of inhaling them all with my hot cup of tea.<br />
<br />
First, the brioche dough. So buttery and beautiful to look at. It gave my KA a good work out, but all ended well. <br />
<br />
When it came time to make the sticky bun dough, the whole step of adding more butter, or laminating the dough, as it's called, made me nervous. I was a little confused by the instruction to not roll over the seams that you had folded. In the end, it all seemed to work okay. Because, although I am no expert and this is my first time working with dough that I have laminated, I was really pleased by what I saw.<br />
<br />
When those sticky buns got flipped out of the baking pans, I stood admiring them for a minute. I quickly spotted the buttery, flaky, separated layers and I felt so proud! I thought...WOW! I can't believe I made those.<br />

They've been baked for almost a week and in the freezer. They are going to a teacher's luncheaon on the 8th, which is probably why I had my dates confused.<br />

Anyway, I made them and they were good. I was unable to find any rhubarb in our grocery store, so I just used what I have and that was raspberry preserves.<br />
<br />
I made the dough when I had some time and tossed it in the freezer. It was tough work, shredding the dough, which I had never done before. Originally, when I read this recipe, I thought it sounded a little like this <a href="http://cookieswithboys.blogspot.com/2010/11/twd-not-just-for-thanksgiving-cranberry.html#%21/2010/11/twd-not-just-for-thanksgiving-cranberry.html">Shortbread Cake/Bar recipe </a>from <a href="http://tuesdayswithdorie.wordpress.com/">TWD</a>, which I absolutely love and try to find reasons to make it.<br />
<br />
This was slightly different. The texture was different, probably from the shredding. And the dusting of confectioners sugar on top adds a little extra sweetness to it, as well. A very tasty recipe and one that I am very happy to share with the teachers.<br />

I did bake the bottom layer for about 10 minutes before adding the preserves and the top layer. I don't know if it made any difference at all. The bottom layer was a little more dense and buttery than the top, which was okay in my book! <br />

It was 7:30 in the morning, so I told him he would have to wait just a little while longer. Didn't want to wake the neighbors just yet.<br /><br />These came together very quickly and it made me feel good to know that there wouldn't be any frying involved. Less mess and a whole lot less fat that way.<br /><br />The recipe did suggest that you could brush melted butter on these before coating in cinnamon sugar, and that did sound incredibly inviting. Unfortunately, this one let me down a little bit. I used all of the onions called for in the recipe. The leeks, yellow onions and shallots. However, when I caramelized them, I think they were just a shade underdone. I felt the flavor of the soup was really missing something.<br /><br />I used wine, as the recipe stated I could, but this one just missed the mark for me. I guess I was expecting something just a tiny bit richer. Without a doubt, I would have eaten them all. The apricot received a handful of mini chocolate chips.
