Breakfast Cookies for CEiMB

So...my friend Natalie chose a cookie this week. A cookie!! Have I told you how I feel about cookies? But this isn't just any cookie. Nope, it's a breakfast cookie.

I must admit that at first, I was really skeptical about this one, Natalie! When I saw that the first ingredient was whole wheat flour, I was sure I was in for a dull and dry cookie. But I got everything ready and baked these up and you know what? I liked 'em.

They are moist. They are cakey. They are a healthy-breakfast-on-the-run alternative. The only change I made was to sub Craisins for the raisins and I did add 2 tbsp of mini chocolate chips, just because.
Marc and I both are enjoying these in the morning and on the run.


With all of the spices, this cookie reminds me of the Raisins & Spice Oatmeal from my childhood days. It's a delicious little cookie. Now, I wouldn't choose it before a chocolate chip cookie, but it's still very good. Thanks Natalie for a surprisingly tasty choice!

I was surprised how moist they were as well! I added mini chips too - yours look great!

This sounds really good! Recently, I bought some dried cranberries for a broccoli slaw recipe and have been meaning to find another recipe to use them in, and who could argue with cookies for breakfast???? These look really, really good!

On another note, you're gonna love those books!!!

Cookies are great any time of day - but the option of making them healthier makes us feel more virtuous.

What fantastic pictures! I love that your cookies look for hand-formed and "natural" - mine were like totally flat on top. I used a raisin/cranberry mix and I love the tartness of the cranberries; I imagine with chocolate that would be AWESOME.

I'm with you - I was really surprised by how much I like these! I think they're a great breakfast-on-the-run alternative. They can't compete with real cookies, but as long as I adjust my expectations, I really enjoy them! Yours look great!

Glad to see someone added chocolate chips!! I was making them and thought.. mmm, chocolate would be good! And then I thought.. Alyssa, this is a breakfast cookie that's supposed to be healthy! LOL.

I will definitely need to try these with chocolate chips!

Great cookies......love the idea of adding the chocolate chips......I think I may do that next time. I used dried cherries and pecans and loved the cookies.......a little chocolate in there may really send me into cookie heaven!

I'm going to have to check out the recipe for these. I'm always looking for new things that B&G might eat for breakfast. Especially things that they can eat on the go (i.e. on the way to school/daycare). Neat idea.

I was wondering about this cookie. Caught Ellie making them on her show not too long ago and put them on my "to try" list. I love the idea of cookies for breakfast, especially Ellie approved healthy ones!
