CEiMB--Vegetable Cheese Strata

Honestly, I'm not much of a strata person. Given the choice at any breakfast or brunch, I would pick some pancakes or waffles and bacon with maybe a scrambled egg on the side. I really enjoy getting a little syrup on my eggs and eating them with whatever carb I've chosen. While the strata choices always sound tempting, I know it's just not what I love.

But because Jen chose this recipe and because we continue to expand our horizons, I made the recipe. Since it was only going to be Marc and I eating it, I cut the recipe in half and baked it in an 8 x 8 pan. I probably should have quartered it, because right now, there is a lot of Strata left over. I think it'll freeze well, though. Well...at least I hope so!


This baby calls for a lot of eggs...4 whole eggs and 4 whites. I used a multi-grain Italian bread, because that's what I had on hand. And while I cut everything else in half, I kept the full half cup of sun-dried tomatoes, just because I love them.

The verdict...we ate this for breakfast on Wednesday morning and we both enjoyed it. Marc had a nice chunk of it and was satisfied by it. I loved the colors and enjoyed the flavors together. Although, I must confess...I ate all of the veggies first and then put a squirt of syrup on there. It was quite enjoyable!

Glad you both liked it. I enjoyed mine as well, admittedly not compared to waffles/pancakes with a side of bacon and an egg on the side though!

That looks really good! The vegetable combo sounds really good (I love mushrooms and broccoli). That being said, I'm with you, I'd go for waffles or french toast first. =)

This looks great! I'm also a fan of sun dried tomatoes, and forgot to add them until I was just putting it in the oven, so they were clustered under the cheese. Thanks for turning us on to syrup with our eggs!

Well maybe it wasn't your first choice, but clap clap clap for mustering on and making it anyway. It looks beautiful and very colorful. Your photos are great. Give me a holler next time and I'll take your left overs. he he sounds like a great brunch offering.

glad you ended up making this, and I also love residual syrup on my breakfast food, especially my hash browns.

I quartered this recipe and it was perfect for two, you could feed an army with the original serving size!
