Simple Broiled Tomatoes

When I was single and lived on my own, I made these broiled tomatoes all the time. They were easy and low-fat and went really well with the Jenny Craig Mac & Cheese I ate for dinner on a regular basis. (Yep...weight loss has been an issue for a long time.)

I sort of forgot about how yummy they are and how simple they are to make.

I line a baking sheet with foil and spray it with PAM. Then, I place the sliced tomatoes on there and sprinkle with a little garlic powder and some oregano and top with just a little freshly grated Parmigiano-Reggiano. I place it in the broiler and check it every couple of minutes to make sure they don't burn.


The result is a soft, melt in your mouth tomato with a lot of flavor and very few calories. Yum!!

I paired this with my CEiMB recipe for the week. I'm glad I decided to make them, and I know I will be making them again soon.

Those ARE pretty! Great for Weight Watchers. Only problem is, I'm on Weight Watchers in the morning, but by the time I get home from work, I'm not on it anymore! LOL Good thing I didn't join.

It sounds almost like a pizza without the bread. I don't even really like tomatoes but those look really good.

They're gorgeous! When my brothers and sisters were little, my mom would do "tomato lessons," where we had to eat a slice of tomato with dinner, and we hated it! Now I love them in sandwiches (though not still not so much in salads, funny thing) but I would love this. Am bookmarking it right now.

I mean, tomatoes are one of my favs. And broiling them only intensifies that wonderful flavor. I can't wait to make these for Todd and myself. Great job!
