I've been trying hard to get organized in the kitchen and last week I actually made a schedule of dinners that I pretty much stuck to. Since Marc went climbing for the weekend, I ditched my Friday night plan and just ate some left overs. I didn't want all of my hard work to go to waste, right? ;o)
I'm trying to eat out of the freezer as well right now and I have a couple of roasting chickens that need to get cooked up. When this months
Cooking Light magazine arrived, I was happy to see their recipe for
Roasted Chicken with Garlicky Jus.

They also served it with smashed New potatoes, but I skipped them.

Marc is the only one who eats mashed or smashed potatoes, so I just made a small and simple batch for him.
The chicken was moist and tasty and the jus (or gravy) was very, very good.

I have chicken to use up in my freezer as well! My only silly question is: if the recipe calls for a whole garlic head does that mean the whole garlic clove bundle? I shall try this! Thanks so much!

That chicken looks great! I also got the latest Cooking Light. I will have to check that out.
Mmm, that garlicky jus sounds like a perfect pairing. What a great idea for a nice weeknight dinner. I'm totally going to have to steal this one. Man oh man, looks great.
