CEiMB--Jerk Chicken with Pineapple Salsa


Do you ever have writers block when it comes to a blog post? I know I can't be the only one.

I usually don't have a problem with words, whether is writing them or speaking them. I can usually just go on and on and on. But tonight, as I sit here, having my tea thinking I really should just be in bed right now, I'm having a tough time getting this post down. Which is why you are currently just reading some random ramblings.

So...on to the chicken!! I was very excited at the prospect of making Ellie's Jerk Chicken with Cool Pineapple Salsa when I learned that Jen chose the recipe. Now, once I finally read the entire recipe, I realized that this one might be a bit too much on the spicy side for our family. Marc and I are good with it, but the boys wouldn't eat it.

I made the pineapple salsa as written, but I forgot to buy mint. Yes, my salsa was mint-less and had no lovely, green garnish...but it was still tasty!


The chicken cooked up quickly and then I tossed the scallion sauce together and used 1/8 tsp of cayenne in there, to give it a little kick of heat. After the boys informed me that they wanted chicken nuggets, I realized I could add the heat. Only, I didn't have the pepper, so I improvised.

While the sauce and the salsa were very good, my chicken was a little overcooked and a tad dry. Totally my fault, though! Marc and I both enjoyed this and I know I would make the salsa again. It would be great on some fish, in my opinion.

Thanks to Jen for a great recipe. While the picture is tempting in the book, I probably would have skipped over this one were it not for CEiMB. Can't wait to see what my CEiMB buddies have done with this recipe!

I get writer's block too at times. Then I usually just stick to writing about the recipe. Sometimes I try to add in some facts about my life, etc. But I know what you mean. The chicken looks very tasty. Pineapple with chicken is delicious!

Looks awesome Pamela! I may actually take your advice and make it with fish this weekend...I have some frozen mahi and am a little chickened out right now. I'm eyeing your tomatoes on your plate...what did you do with them, they look tasty!

Haha I have writers block on most of my posts so I know how you feel. I really need to get that cookbook. All of the recipes look so good! Nice job.

I am hearing positives about this salsa all around so far. We only had diced pineapples and now I want to try it!

It was on the hot side...but I loved it. I think I actually put in too much garlic.

I always have writers' block. I can't even finish my sent...

I always get writers block! It is hard because I always feel like I am saying the same thing, so I totally understand.
I wish I would've gotten to this recipe it looks delicious. I think it would taste great on fish too.

Nick will tell you that I've had writers block for two months! It happens to us all!

I bet that salsa would be good on some fish, (or anything cooked a little on the spicy side.)

We'll have to check that out!

This dish looks awesome. I get writers block all the time. When I find that I'm stuck I leave it alone for a bit and then come back with a fresh mind.

I've had writer's block for a while now. I think I'm getting boring!! I love the tomatoes you served with this. I'll have to try those. We loved this jerk chicken and I will make it again. Yours looks delicious and not overcooked at all!

Yes, I love to eat the food but I don't always know what to say on my blog to communicate that to others....that looks good.>I want to make it soon....I have to join the CEiMB at some point...
