Caramelized Onion & Blue Cheese Orzo

Marc usually goes to the gym every Tuesday night, so I try to save that night to cook foods that I enjoy but I know he's not so crazy about.

Like blue cheese, for instance. Marc is not a fan. At all. So, as he was gathering things together for the gym, I searched on All Recipes for ideas to use up some of the extra Mascarpone cheese that I had left over from this past weeks TWD.

Caramelized Onion & Blue Cheese Orzo popped up and called out to me. "Make me! Eat me!" it cried. So, I did. The most time consuming aspect of the recipe is caramelizing the onions, but they are so worth it. And for me, there is just something so incredibly good about caramelized onions and blue cheese.

The recipe I have here has been scaled down to 2 servings, and they are LARGE servings. (Or at least they were for me) You can find the original recipe here.


Caramelized Onion & Blue Cheese Orzo

  • 1/2 pound uncooked orzo pasta
  • 1 tablespoon butter
  • 1 tablespoon and 1-1/2 teaspoons olive oil
  • 2 onions, sliced
  • 3-1/2 ounces blue cheese, crumbled
  • 1-1/2 ounces Mascarpone cheese
  • 1 cup shredded spinach
  • salt and pepper to taste
  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. While pasta is cooking, heat butter and oil in a large skillet over low heat. Cook onion in this mixture until golden brown, 20 to 30 minutes. Remove from pan with a spoon and drain on paper towels.
  3. In a large bowl, combine blue cheese, Mascarpone and onion and mix well. Toss cheese mixture with spinach and pasta, season with salt and pepper and serve.
P.S. This one was all mine! The boys had some left overs and wanted nothing to do with my goopy, oniony orzo. And that was just fine by me.

I LOVE caramelized onions! I was also looking for a way to use up the mascarpone cheese and this looks yummy!

Okay, I dislike onions in all sizes, shapes and forms, but just wanted you to know that I always read all your posts and your food always looks yummy (minus the onions! ;)

Carmelized onions is one of those things that take a little bit of extra time, but they are so delicious that it's always totally worth it. That looks like a great dinner!

That looks really good. I'm not that fond of onions, though. I'd probably do mushrooms instead--I love them with blue cheese. Mmm...
