Pumpkin Pancakes


I have quite a bit of leftover pumpkin in the fridge right now. I only had a big, 28 ounce can in the pantry when I made the Chocolate Pumpkin Whoopie Pies, and that recipe only needed 1/4 cup of pumpkin. So, before I tossed the remainder into the freezer, I thought I would see what else I could use it for.

I remember seeing a Pumpkin pancake recipe on Jodie's blog, and I've never tried them before. I checked on All Recipes and this pancake recipe was highly rated, with 398 reviews and a 4.5 star rating. So, I decided to give it a try.

It's just me and the boys this weekend, as Marc is rock climbing with some friends in New Hampshire. Therefore, I scaled back the recipe to serve 3, which is one of the reasons I love All Recipes so much. Anyway, I wasn't sure how the boys would like these, since they can be pretty picky on any other morning. Much to my surprise, they both enjoyed them and Christian ate almost 2 of them!

I had 3, as I made these pancakes on the smaller side. I served them with a little bit of bacon, of course. It was a hearty, fall inspired and warm, flavorful breakfast served this morning, while the leaves blew off the trees in the rain.

Pumpkin Pancakes

  • 1 cup all-purpose flour
  • 1 tablespoon and 1-1/2 teaspoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk (used skim)
  • 1/2 cup pumpkin puree
  • 1/2 egg (used 1 whole large egg)
  • 1 tablespoon vegetable oil
  • 1 tablespoon vinegar

  1. In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
NOTE: The batter was on the thick side, so I thinned it out with a bit more milk. I also added about 1/8 tsp. of nutmeg.

There are just so many pumpkin ideas out there I want to go buy more cans of pumpkin so I can try them out! We used to be obsessed with the Aunt Jemima pancake mix.. I wonder how we feel about those now.. haha. Isn't it weird how it all changes after you start baking and cooking from scratch? Suddenly, everything tastes different from what you remember it being.

Those pancakes look nicely brown and I'm glad you enjoyed the recipe. I don't always have as much luck with allrecipes (even the highly rated ones). I think it's because people modify the recipe so much and then give it a rating that is no longer based on the original. I'm sure that was a very flavourful breakfast with the bacon too.. I love bacon dipped in maple syrup.. yum!

Cool! I've tried to make pumpkin pancakes before (modifying my regular pancake recipe), but mine didn't turn out quite right. I'm glad to see a review of a recipe that works. I love the top picture with the pumpkin. =)

they look like perfect little circles of orange! i'm so glad you put your leftover pumpkin to use--i know several people who would've just tossed it. that's just unconscionable behavior--look what it could become! :)

I love pumpkin pancakes. I just made some last weekend. Yummy! I noticed that one of your favorite books is a Tree grows in Brooklyn. I couldn't put that one down. I picked it up during finals in college and needless to stay, I didn't study but read instead. It is a wonderful book, touching and important and hopeful.
